
Spinach with Pistachios
Ingredients
- 2 tablespoons raisins
- 4 tablespoons apple liqueur or natural apple juice
- 2 1/4 lb spinach
- 5 pints water
- salt and freshly milled white pepper
- 1 small onion
- 1/2 oz butter
- pinch of grated nutmeg
- 2 tablespoons pistachios or flaked almonds
Instructions
- Wash the raisins thoroughly in lukewarm water, drain and soak in the apple liqueur or juice in a small basin.
- Sort the spinach and wash it several times in lukewarm water. Bring the water to the boil with a pinch of salt, in the
- spinach. Boil for 3 minutes, drain well in a sieve and press out excess water.
- Finely dice the onion.
- Melt 50 g (2 oz) of the butter in a large frying pan, fry the onions until transparent, stirring frequently, then add the spinach, loosening it with 2 forks.
- Add the raisins and the soaking liquid. Stir well and season with salt, pepper and nutmeg. Steam the spinach for 5 minutes.
- Coarsely chop the pistachios. Heat the remaining butter, stir in the pistachios or almonds, then sprinkle them over the spinach.
- Serve with: pork chops or poached fish fillets and steamed potatoes.
