
Roquefort Pear Salad
Ingredients
- 3 ripe pears peeled and cored
- juice of 1/2 lemon
- 1 curly endive
- 1 radicchio
- 4 oz Roquefort or crumbly blue cheese
- 1 tsp coarse grained mustard
- 1 tbsp white wine vinegar
- olive oil
Instructions
- Cut pears into 1/4 inch (5 mm) slices lengthways, sprinkle with a little lemon juice. Arrange on a bed of endive and radicchio.
- Crumble cheese over pears. Mix lemon juice, mustard and vinegar with seasoning. Add olive oil and mix well.
- Pour over cheese and pears.
