  • 3 ripe pears peeled and cored
  • juice of 1/2 lemon
  • 1 curly endive
  • 1 radicchio
  • 4 oz Roquefort or crumbly blue cheese
  • 1 tsp coarse grained mustard
  • 1 tbsp white wine vinegar
  • olive oil


  • Cut pears into 1/4 inch (5 mm) slices lengthways, sprinkle with a little lemon juice. Arrange on a bed of endive and radicchio.
  • Crumble cheese over pears. Mix lemon juice, mustard and vinegar with seasoning. Add olive oil and mix well.
  • Pour over cheese and pears.
