Potato Latkes
Ingredients
- 4 1/2 lb raw potatoes
- 4 beaten eggs
- 8 oz flour sifted with 2 tsp baking powder
- salt and pepper.
Instructions
- Finely grate 4 1/2 lb raw potatoes and leave to drain on a sieve for 10 minutes.
- Combine with 4 beaten eggs, 8 oz flour sifted with 1 tsp baking powder, salt and pepper.
- Shape into small cakes or spoon mould and golden shallow fry in oil for 7 minutes; drain and serve.
