
Pears with Curd Cheese
Ingredients
- 2 oz Stilton cheese
- 1/4 pint natural low-fat yogurt
- 4 oz curd cheese
- salt and pepper
- 2 ripe dessert pears
for the garnish
- shredded lettuce leaves
- 1 tablespoon chopped chives
Instructions
- Mash the Stilton cheese with 1 tablespoon of the yogurt and set aside.
- Place the curd cheese in a bowl and beat in the remaining yogurt, and salt and pepper to taste.
- Peel, halve and core the pears. Divide the Stilton filling between each cavity.
- Arrange the lettuce on a serving dish and place the pears, cut side down, on top. Spoon over the yogurt and curd cheese mixture and sprinkle with the chives. Serve the pears chilled.
- Chives can be grown successfully in a flower pot on a sunny window-sill. The easiest way to chop them is to use a pair of sharp scissors.
