The flavour of these tender, edible pea pods (known as snow peas) is preserved by keeping the steaming time down to a minimum. Prepare the mangetout by trimming the tips and removing the strings.

  • 8 oz large-sized mangetout
  • 7-8 anchovy fillets
  • 12 oz cottage cheese
  • Salt and freshly ground black pepper


  • Cut the anchovy fillets into halves and leave to soak for 20 minutes to remove excess salt. Prepare the mangetout and place them in a large steaming basket set over boiling water. Steam for 1 minute, then rinse immediately under cold running water.
  • Chop the anchovies into small pieces. Drain any liquid from the cottage cheese and then mix the anchovies into it, seasoning to taste.
  • Using a sharp knife, take each mangetout and cut away a sliver along the whole length of the pod on one side, and then ease open.
  • Fill the mangetout carefully with the anchovy-flavoured cottage cheese by pressing it in with a pointed knife or using a piping bag. Dust with pepper and serve.
