This is one of the basic dishes of Chinese cuisine and can be either served on its own, or used as an elaborate rice accompaniment dish.

Ingredients
 

  • 8 oz Long-grain rice soaked in cold water for 30 minutes and drained
  • 15 floz Water
  • 1 1/2 tsp Salt
  • 2 Tbs Vegetable oil
  • 2 Medium onions finely chopped
  • 8 oz Cooked ham finely chopped
  • 2 Tbs Petits pois
  • 2 Medium tomatoes blanched, peeled and quartered
  • 8 oz Frozen shrimps thawed and shelled
  • 1 Tbs Soy sauce
  • 1 Egg lightly beaten

Instructions

  • Put the rice into a saucepan and pour over the water and 1 teaspoon of salt. Bring to the boil, reduce the heat to low and cover the pan.
  • Simmer for 15 to 20 minutes, or until the water has been absorbed and the rice is cooked and tender. Remove from the heat.
  • Heat the oil in a large saucepan. Add the onions and fry until they are soft. Stir in the ham, petits pois, tomatoes, shrimps and remaining salt and cook for 1 minute, stirring constantly. Stir in the cooked rice and cook for 2 minutes, stirring constantly. Add the soy sauce and egg and cook for 2 minutes, stirring constantly.
  • Transfer the mixture to a warmed serving dish and serve at once.
