  • 10 onions each weighing about 4 1/2 oz
  • 1 oz butter
  • 1 litre white stock
  • 5 1/3 oz bacon rind or trimmings
  • 2 1/2 oz salt
  • 6 3/4 floz jus lie or demi-glace


  • Peel the onions but do not cut the root ends too short.
  • Butter and season a braising pan, add the onions, season and three-quarters cover with the stock.
  • Cover with the bacon, greaseproof paper and a lid, bring to the boil and braise in the oven at 180°C for 1 hour.
  • Serve in a vegetable dish, coated with the brown sauce.
