
Braised Onions (Oiqnons Braisés)
Ingredients
- 10 onions each weighing about 4 1/2 oz
- 1 oz butter
- 1 litre white stock
- 5 1/3 oz bacon rind or trimmings
- 2 1/2 oz salt
- 6 3/4 floz jus lie or demi-glace
Instructions
- Peel the onions but do not cut the root ends too short.
- Butter and season a braising pan, add the onions, season and three-quarters cover with the stock.
- Cover with the bacon, greaseproof paper and a lid, bring to the boil and braise in the oven at 180°C for 1 hour.
- Serve in a vegetable dish, coated with the brown sauce.
