Ingredients
 

  • 1 lb liver
  • 1 onion finely chopped
  • pinch grated nutmeg
  • 1/2 tsp ground coriander
  • 1 1/2 tsp salt
  • freshly ground black pepper to taste
  • 1 tbsp vinegar
  • 1 egg beaten
  • 2 tbsp plain flour All purpose
  • 1/2 tsp baking powder
  • 1 caul fat

Instructions

  • Place liver in boiling water for 1 minute and remove membrane.
  • Shred liver with a fork. Add all ingredients except caul, fat to liver and mix well.
  • Spoon liver mixture onto caul fat, fold over and secure with cocktail sticks.
  • Place in ovenproof dish and bake at 160°C (325°F) gas 3 for 1 hour or until cooked.
