Baked Fillets of Bream and Cod (Caldeirada Estilo Nazare)
This recipe for baked fillets of bream and cod is a great standalone dish or as an accompaniment to other fish or meat dishes.
- fillet each of cod and bream per person
- chopped onion
- diced tomato flesh and red pimento and chopped garlic
- white wine
- few strands of saffron
- Fry chopped onion in oil then add diced tomato flesh and red pimento and chopped garlic, moisten with white wine and add a bayleaf and a few strands of saffron.
- Place a fillet each of cod and bream per person in a shallow dish, moisten with the prepared liquid and bake, basting occasionally at 180°C for 15 minutes.
