Artichokes with Anchovy Filling (Carciofi alia Triestina)
Ingredients
- 20 small artichokes
- 10 1/2 oz white breadcrumbs
- 2 tsp chopped parsley
- 4 chopped cloves of garlic
- 5 1/2 oz grated Parmesan cheese
- 3 1/2 oz chopped anchovy fillets
- 2 tbsp olive oil
- salt and pepper
Instructions
- Cut off the tops of the artichokes and remove the chokes.
- Combine the remainder of the ingredients into a stuffing.
- Fill into the centres of the artichokes.
- Place in a shallow pan, moisten one-third of the way up with salted water and a little olive oil, cover and cook for 40 minutes. Serve hot with some of the cooking liquid.
