This fruit compote will keep in the fridge for up to a week in a sealed container as the port helps to preserve it.

Ingredients
 

  • 8 oz pears peeled, cored and sliced
  • 6 oz plums quartered and stoned
  • 8 oz apples peeled, cored and sliced
  • 1 3/4 oz dried prunes sliced
  • 2 floz port
  • 1 cinnamon stick
  • 2 cloves
  • finely pared zest of 1 orange
  • 5 floz apple juice

Instructions

  • Place all the ingredients in a large saucepan.
  • Bring the pan to the boil, reduce the heat, and simmer for 10 minutes over a low heat.
  • Remove the pan from the heat and allow the mixture to cool completely - this will take about 2 hours. Remove the cinnamon stick and cloves, and then chill in the fridge for at least 2 hours before serving.
