Vegetarian Burgers recipe with white cabbages, carrots, egg garnished with a sprig of parsley.

  • 1 onion grated
  • 1 1/2 lb white cabbage grated
  • 8 oz carrots grated
  • 4 oz hazelnuts coarsely chopped
  • 4 oz fresh brown breadcrumbs
  • 1 large egg
  • 3 tablespoons soy sauce
  • 1 teaspoon marjoram
  • salt and pepper
  • 1 oz plain flour
  • oil for deep frying
  • parsley sprig to garnish


  • Mix together all the ingredients, except the flour, and beat well. Shape the mixture into eight cakes and coat each in the flour.
  • Heat the oil for deep frying to 190C/375F (until a cube of bread turns golden in 30 seconds). Cook the burgers a few at a time for 5-7 minutes, or until golden, and drain on absorbent kitchen paper. Keep hot
  • while cooking the remaining burgers.
  • Garnish with a sprig of parsley and serve hot with Leeks in Sauce.


Freezer Tips
These burgers freeze well. Make a large batch, shape and open freeze on cling film until firm. Pack in bags and label. Cook from frozen.
