
Vegetarian Burgers
Vegetarian Burgers recipe with white cabbages, carrots, egg garnished with a sprig of parsley.
Ingredients
- 1 onion grated
- 1 1/2 lb white cabbage grated
- 8 oz carrots grated
- 4 oz hazelnuts coarsely chopped
- 4 oz fresh brown breadcrumbs
- 1 large egg
- 3 tablespoons soy sauce
- 1 teaspoon marjoram
- salt and pepper
- 1 oz plain flour
- oil for deep frying
- parsley sprig to garnish
Instructions
- Mix together all the ingredients, except the flour, and beat well. Shape the mixture into eight cakes and coat each in the flour.
- Heat the oil for deep frying to 190C/375F (until a cube of bread turns golden in 30 seconds). Cook the burgers a few at a time for 5-7 minutes, or until golden, and drain on absorbent kitchen paper. Keep hot
- while cooking the remaining burgers.
- Garnish with a sprig of parsley and serve hot with Leeks in Sauce.

These burgers freeze well. Make a large batch, shape and open freeze on cling film until firm. Pack in bags and label. Cook from frozen.
