Spanish Baked Sliced Courgette (Calabacin al Horno)
Ingredients
- 4 1/2 lb sliced courgettes
- 3 1/2 oz white breadcrumbs
- 4 chopped cloves of garlic
- 1 oz chopped parsley
- 2 oz melted butter
Instructions
- Place 4 1/2 lb sliced courgettes into a liberally oiled and seasoned earthenware dish. Season and bake in the oven at 180°C for 45 minutes.
- When almost cooked, cover with 3 1/2 oz white breadcrumbs mixed with 4 chopped cloves of garlic and 1 oz chopped parsley, sprinkle with 2 oz melted butter and gratinate until golden brown.
