Ingredients
 

  • 1 oz diced potato
  • 4 tbsp olive oil
  • 3 1/2 oz chopped onion
  • 1/4 clove chopped garlic
  • 1/2 oz chopped green pimento
  • 1/2 oz diced tomato flesh

for the omelette

  • 3 beaten and seasoned eggs
  • 1 oz butter or oil
  • melted butter

Instructions

  • Golden fry 1 oz diced potato in 4 tbsp olive oil, drain, season and retain.
  • Lightly fry 3 1/2 oz chopped onion, 1/4 clove chopped garlic, 1/2 oz chopped green pimento and 1/2 oz diced tomato flesh in the same pan.
  • Add to the beaten eggs and make into a flat omelette, slide onto a plate and serve.
