Spanish Vegetable Omelette (Tortilla a la Payesa)
Ingredients
- 1 oz diced potato
- 4 tbsp olive oil
- 3 1/2 oz chopped onion
- 1/4 clove chopped garlic
- 1/2 oz chopped green pimento
- 1/2 oz diced tomato flesh
for the omelette
- 3 beaten and seasoned eggs
- 1 oz butter or oil
- melted butter
Instructions
- Golden fry 1 oz diced potato in 4 tbsp olive oil, drain, season and retain.
- Lightly fry 3 1/2 oz chopped onion, 1/4 clove chopped garlic, 1/2 oz chopped green pimento and 1/2 oz diced tomato flesh in the same pan.
- Add to the beaten eggs and make into a flat omelette, slide onto a plate and serve.
