  • 1 long cucumber
  • 1/2 lb ripe strawberries
  • salt

for the dressing

  • 2 tablespoons each olive oil and sunflower oil
  • juice of 1 lemon
  • 1 good pinch Salt
  • 1/2 teaspoon sugar


  • Wash and trim the cucumber and slice very thinly.
  • Arrange the cucumber on a plate in concentric circles.
  • Sprinkle with salt and leave for 10 minutes while you are doing everything else.
  • Slice the strawberries not quite so thinly, then make the dressing.
  • Whisk together the lemon juice, salt and sugar, beat in the olive oil, then the sunflower oil.
  • Pour the liquid off the cucumber - the salt will have drawn out some of the juices - and arrange the strawberries in more rings on top of the cucumber.
  • Pour the dressing over and serve immediately.
