Salade Elana
Ingredients
- 1 long cucumber
- 1/2 lb ripe strawberries
- salt
for the dressing
- 2 tablespoons each olive oil and sunflower oil
- juice of 1 lemon
- 1 good pinch Salt
- 1/2 teaspoon sugar
Instructions
- Wash and trim the cucumber and slice very thinly.
- Arrange the cucumber on a plate in concentric circles.
- Sprinkle with salt and leave for 10 minutes while you are doing everything else.
- Slice the strawberries not quite so thinly, then make the dressing.
- Whisk together the lemon juice, salt and sugar, beat in the olive oil, then the sunflower oil.
- Pour the liquid off the cucumber - the salt will have drawn out some of the juices - and arrange the strawberries in more rings on top of the cucumber.
- Pour the dressing over and serve immediately.
