
Rice Bake
Ingredients
- 4 oz long- grain rice
- 1/2 pint water
- salt and pepper
- 8 oz cooked ham diced
- 4 hard-boiled eggs chopped
- 8 oz Cheddar cheese diced
- bunch of parsley chopped
for the white sauce
- 2 oz butter or margarine
- 2 oz plain flour
- 1 pint milk
- salt and pepper
Instructions
- Cook the rice as instructed.
- Mix together the ham, eggs, Cheddar, parsley and seasoning, reserving a little parsley to garnish.
- For the white sauce, melt the butter or margarine over a low heat. Add the flour, cook for 2 minutes, stirring constantly, then gradually add the milk and stir until the sauce boils and thickens. Reduce the heat and simmer gently for 2 minutes. Add the seasoning.
- Pour some of the sauce into a baking dish, followed by a layer of ham mixture, then a layer of rice. Continue layering in this fashion until all the ingredients are used up. Finish with a layer of sauce.
- Bake in a moderately hot oven for 30 minutes until golden. Garnish with the reserved parsley, and serve hot with a green salad.
Freezer Tip
- Left over rice freezes well. Pack into a polythene bag and seal. Defrost in a microwave or empty into a pan of boiling water and bring back to boil.
