Ingredients
 

  • 8 oz raspberries
  • 2 tablespoons clear honey
  • 8 oz natural yogurt
  • 8 oz low fat fromage frais
  • 2 oz walnuts roughly chopped
  • mint and raspberries for decoration

Instructions

  • Lightly mash the raspberries with a fork and mix with half of each of the following ingredients, honey, yogurt and fromage frais.
  • In a separate bowl mix the remaining honey, yogurt, fromage frais and walnuts.
  • Spoon half of the raspberry mixture in the base of 4 individual dishes. Spoon over three quarters of the walnut mixture and then the remaining raspberry mixture.
  • Top with walnut mixture and swirl the mixtures together with a cocktail stick. Decorate with whole raspberries and sprigs of mint.
