Raspberry and Walnut Swirl
Ingredients
- 8 oz raspberries
- 2 tablespoons clear honey
- 8 oz natural yogurt
- 8 oz low fat fromage frais
- 2 oz walnuts roughly chopped
- mint and raspberries for decoration
Instructions
- Lightly mash the raspberries with a fork and mix with half of each of the following ingredients, honey, yogurt and fromage frais.
- In a separate bowl mix the remaining honey, yogurt, fromage frais and walnuts.
- Spoon half of the raspberry mixture in the base of 4 individual dishes. Spoon over three quarters of the walnut mixture and then the remaining raspberry mixture.
- Top with walnut mixture and swirl the mixtures together with a cocktail stick. Decorate with whole raspberries and sprigs of mint.
