Potato Steamed Date Pudding
Ingredients
- 8 oz cooked sieved potatoes
- 3 oz chopped stoned (seeded) dates
- 1 medium egg beaten
- 2 tbls caster sugar superfine granulated
- 2 oz butter melted
- 1 orange rind grated, plus juice
- Pinch salt
Instructions
- Mix all ingredients thoroughly, adding sufficient orange juice to make a soft consistency.
- Put pudding mixture into a lightly greased 900 ml (1 1/2 pt) basin, cover and steam for 1 1/2 hours, adding boiling water to the pan of the steamer when necessary.
