Mewa Ka Pulao (Rice cooked with dry fruits)
Ingredients
- 11 oz Rice Basmati
- 7 oz Ghee
- 2 tsp Garam masala
- 16 floz Water
- 1/2 tsp Saffron kesar
- 3 1/2 floz Warm milk
- 1 1/2 oz Cashew nuts kaju, broken, fried
- 1 1/2 oz Walnuts akhrot, fried
- 2 oz Almonds badaam, fried
- 1 1/2 oz Groundnuts moong phalli, fried
- 2 oz Pistachios pista, fried
- 1 1/2 oz Raisins Jdshmish, fried
- 1 tbsp Rose water gulab jaf
- 2 oz Onions fried
Instructions
- Soak the rice in sufficient water for 30 minutes. Drain and keep aside.
- Heat the ghee in a pan; add garam masala. Saute for a few seconds. Add rice and stir till a pleasing aroma emanates. Add water and boil till 3/4th cooked. Drain and keep aside.
- Soak the saffron in warm milk.
- In a pot, sprinkle some saffron mixture. Spread a layer of rice and dry fruits, then add the remaining saffron mixture, rose water, and fried onions. Seal the pot with aluminum foil.
- Cook on very low heat (dum) for 30 minutes. Remove and serve hot.
