  • 11 oz Rice Basmati
  • 7 oz Ghee
  • 2 tsp Garam masala
  • 16 floz Water
  • 1/2 tsp Saffron kesar
  • 3 1/2 floz Warm milk
  • 1 1/2 oz Cashew nuts kaju, broken, fried
  • 1 1/2 oz Walnuts akhrot, fried
  • 2 oz Almonds badaam, fried
  • 1 1/2 oz Groundnuts moong phalli, fried
  • 2 oz Pistachios pista, fried
  • 1 1/2 oz Raisins Jdshmish, fried
  • 1 tbsp Rose water gulab jaf
  • 2 oz Onions fried


  • Soak the rice in sufficient water for 30 minutes. Drain and keep aside.
  • Heat the ghee in a pan; add garam masala. Saute for a few seconds. Add rice and stir till a pleasing aroma emanates. Add water and boil till 3/4th cooked. Drain and keep aside.
  • Soak the saffron in warm milk.
  • In a pot, sprinkle some saffron mixture. Spread a layer of rice and dry fruits, then add the remaining saffron mixture, rose water, and fried onions. Seal the pot with aluminum foil.
  • Cook on very low heat (dum) for 30 minutes. Remove and serve hot.
