Maple Spareribs
Spare ribs are a popular and inexpensive meat, and they lend themselves very well to a variety of sauces. Serve these spare ribs, as below, with lots of salad for a superb informal meal.
Ingredients
- 5 floz Maple syrup
- 1/4 tsp Cayenne pepper
- Salt and pepper to taste
- 2 Garlic cloves crushed
- 2 Tbs Tomato puree paste
- 1 Tbs Prepared French or German mustard
- 2 Tbs Lemon juice
- 4 lb Spareribs of pork trimmed of excess fat and cut into 2-rib serving pieces
Instructions
- Preheat the oven to fairly hot 200°C (Gas Mark 6, 400°F).
- Combine all the ingredients, except the spareribs, and beat well to blend.
- Arrange the spareribs in a roasting pan and put the pan into the oven. Roast the ribs for 30 minutes. Remove the pan from the oven and remove the spareribs. Discard the fat in the pan, then return the ribs. Pour over the syrup mixture and baste well.
- Reduce the oven temperature to moderate 180°C (Gas Mark 4, 350°F) and continue to roast the ribs, basting frequently, for 45 minutes, or until they are browned and glazed. Serve at once.
