Lettuce And Avocado Soup
Ingredients
- 1 1/2 pints chicken stock
- 2 lettuces roughly chopped
- 2 avocados stoned and peeled
- 2 floz dry white wine
- 1 green chilli seeded and finely chopped
- 5 floz soured cream
to garnish:
- finely shredded lettuce
Instructions
- Boil stock and plunge in lettuces. Leave for 2 minutes. Allow to cool.
- Mash avocados with a fork, stir in wine, chilli and seasoning. Add lettuces and stock and blend in a liquidiser or food processor until smooth.
- Stir in soured cream. Chill, garnish and serve the same day.
