Lemon Crunch
Ingredients
- 6 digestive biscuits crushed
- 1 egg yolk
- 1 oz caster sugar
- grated rind and juice of 1 lemon
- 4 oz cream cheese
- 4 oz quark
to decorate:
- grated chocolate
Instructions
- Divide the biscuits between 4 glasses. Blend the remaining ingredients together until smooth.
- Spoon over the biscuits and chill. Decorate with chocolate just before serving.
