Haricot Beans in Cream Sauce
Ingredients
- 1.6 lb haricot beans
- 9 1/2 oz fried lardons of bacon
- 1/2 pint boiling chicken stock
- 2 tbsp lemon
- 1/2 pint cream
- 2 1/2 oz butter
- 4 tsp mixed chopped parsley chervil, tarragon, chives
Instructions
- Soak the beans in cold water for 12 hours, then drain and wash.
- Place into a saucepan, cover with cold water, bring to the boil and skim.
- add 9 1/2 oz fried lardons of bacon. Reduce 1/2 pint boiling chicken stock and 2 tbsp lemon juice until syrupy, add 1/2 pint cream and 2 1/2 oz butter and mix into the beans.
- Finish by adding 4 tsp mixed chopped parsley, chervil, tarragon and chives and serve.
