  • 1.3 lb french bean green beans
  • 2 oz butter
  • 1 egg
  • 2 tsp grated Parmesan cheese
  • 4 1/3 floz single cream Light cream
  • 2 tsp lemon juice
  • a pinch of grated nutmeg
  • salt and black pepper


  • Prepare the beans and boil or steam them until almost tender. Drain thoroughly.
  • Heat the butter in a saucepan, add the beans, cover, and cook over gentle heat, shaking the pan frequently, until they are quite tender.
  • Meanwhile, beat the egg in a small pan until liquid.
  • Add the cheese, cream, lemon juice, nutmeg and seasoning, and heat gently, without boiling.
  • Spoon the beans into a serving dish, pour the cream sauce over them, and serve as soon as possible.
