French Beans with Cream Sauce
Ingredients
- 1.3 lb french bean green beans
- 2 oz butter
- 1 egg
- 2 tsp grated Parmesan cheese
- 4 1/3 floz single cream Light cream
- 2 tsp lemon juice
- a pinch of grated nutmeg
- salt and black pepper
Instructions
- Prepare the beans and boil or steam them until almost tender. Drain thoroughly.
- Heat the butter in a saucepan, add the beans, cover, and cook over gentle heat, shaking the pan frequently, until they are quite tender.
- Meanwhile, beat the egg in a small pan until liquid.
- Add the cheese, cream, lemon juice, nutmeg and seasoning, and heat gently, without boiling.
- Spoon the beans into a serving dish, pour the cream sauce over them, and serve as soon as possible.
