
Gingered Swede
Ingredients
- 1 lb swede peeled
- 4 tbsps water
- Sea salt
- Freshly ground black pepper
- 1/2 oz low fat spread
- 2 tbsps fresh ginger peeled and grated
- Fresh ginger peeled and cut into thin strips, or parsley, to garnish
Instructions
- Cut the swede into small pieces and place in a bowl with the water, sea salt and freshly ground black pepper.
- Loosely cover and cook on HIGH for 10-15 minutes or until tender, stirring twice.
- Drain well and mash thoroughly or puree in a food processor with the low fat spread. Stir in the ginger.
- Reheat on HIGH for 1 - 2 minutes if necessary Serve hot. Garnish with fresh ginger or parsley
