  • 1 lb swede peeled
  • 4 tbsps water
  • Sea salt
  • Freshly ground black pepper
  • 1/2 oz low fat spread
  • 2 tbsps fresh ginger peeled and grated
  • Fresh ginger peeled and cut into thin strips, or parsley, to garnish


  • Cut the swede into small pieces and place in a bowl with the water, sea salt and freshly ground black pepper.
  • Loosely cover and cook on HIGH for 10-15 minutes or until tender, stirring twice.
  • Drain well and mash thoroughly or puree in a food processor with the low fat spread. Stir in the ginger.
  • Reheat on HIGH for 1 - 2 minutes if necessary Serve hot. Garnish with fresh ginger or parsley
