
Cucumber and Pork Soup
Ingredients
- 2 1/4 pints Chicken stock
- 1 tsp Salt
- 1 Tbs Soy sauce
- 8 oz Pork fillet tenderloin, cut into very thin strips
- 2 Medium cucumbers peeled, halved lengthways, seeded and cut into 1/2 cm (1/4 in) slices
Instructions
- Pour the stock, salt and soy sauce into a large saucepan and stir in the pork strips.
- Bring to the boil over moderate heat and cook for 10 minutes. Add the cucumbers to the pan and return to the boil.
- Cook for 3 minutes, or until the cucumbers are translucent.
- Transfer the soup to a warmed tureen and serve at once.
