
Chocolate Mousse #6
This chocolate mousse recipe is so easy to make, it's nearly impossible to mess up. It's light, fluffy, rich, and perfect for any occasion.
Ingredients
- 4 oz plain chocolate
- 1 oz butter
- 2 eggs
- 1 tablespoon sugar
- pinch of salt
- 8 floz double cream
- 1 tablespoon icing sugar
- 1 tablespoon chopped pistachios
- 4 coffee beans
Instructions
- Break the chocolate into a small saucepan with the butter and melt over a very low heat or melt in a bowl over a saucepan of hot water.
- Separate the eggs. Whisk the yolks with the sugar until frothy. Whisk the whites with the salt until stiff. Whip the cream with the icing sugar until very stiff.
- Remove the melted chocolate from the heat, mix it into the egg yolks and fold in 2 tablespoons of the whites. Leave the mixture to cool slightly, then fold in the remaining egg whites and half the whipped cream.
- Rinse 4 individual glasses in cold water, fill them with the mixture and set in the refrigerator. Spoon the remaining cream into a piping bag with a plain nozzle.
- Before serving, decorate each chocolate mousse with small balls of cream. Sprinkle the cream with chopped pistachios and top with 1 coffee bean.
