  • 4 oz plain chocolate
  • 1 oz butter
  • 2 eggs
  • 1 tablespoon sugar
  • pinch of salt
  • 8 floz double cream
  • 1 tablespoon icing sugar
  • 1 tablespoon chopped pistachios
  • 4 coffee beans

  • Break the chocolate into a small saucepan with the butter and melt over a very low heat or melt in a bowl over a saucepan of hot water.
  • Separate the eggs. Whisk the yolks with the sugar until frothy. Whisk the whites with the salt until stiff. Whip the cream with the icing sugar until very stiff.
  • Remove the melted chocolate from the heat, mix it into the egg yolks and fold in 2 tablespoons of the whites. Leave the mixture to cool slightly, then fold in the remaining egg whites and half the whipped cream.
  • Rinse 4 individual glasses in cold water, fill them with the mixture and set in the refrigerator. Spoon the remaining cream into a piping bag with a plain nozzle.
  • Before serving, decorate each chocolate mousse with small balls of cream. Sprinkle the cream with chopped pistachios and top with 1 coffee bean.
