  • Leg of Pork
  • 8 3/4 oz turned carrots
  • 8 3/4 oz turned turnips
  • 8 3/4 oz sliced onion
  • bouquet garni
  • 5 1/3 oz broad beans
  • Parsley Sauce


  • Place the meat into a saucepan and cover with cold water, bring to the boil and skim thoroughly.
  • Add 8 3/4 oz each of turned carrots, turnips and sliced onion and a bouquet garni.
  • When almost cooked, add 5 1/3 oz broad beans and cook until tender.
  • Serve slices of the meat with the vegetables, moistened with the cooking liquor and accompanied by Parsley Sauce.
