Boiled Leg of Pork with Broad Beans
Ingredients
- Leg of Pork
- 8 3/4 oz turned carrots
- 8 3/4 oz turned turnips
- 8 3/4 oz sliced onion
- bouquet garni
- 5 1/3 oz broad beans
- Parsley Sauce
Instructions
- Place the meat into a saucepan and cover with cold water, bring to the boil and skim thoroughly.
- Add 8 3/4 oz each of turned carrots, turnips and sliced onion and a bouquet garni.
- When almost cooked, add 5 1/3 oz broad beans and cook until tender.
- Serve slices of the meat with the vegetables, moistened with the cooking liquor and accompanied by Parsley Sauce.
