
Birthday Cake
Ingredients
- 6 oz butter or margarine
- 6 oz caster sugar
- 3 eggs lightly beaten
- 8 oz self-raising flour
- 8 oz chocolate chips
- a little milk if necessary

- 3 oz butter or margarine
- 8 oz icing sugar sifted
- 1 - 2 tablespoons milk
- a few drops of green food colouring
- 5 1/2 oz packet chocolate animals

Instructions
- Line and grease a deep 18 cm (7 in) cake tin. Cream the butter or margarine and sugar until pale and fluffy. Gradually add the eggs.
- Fold in the flour and chocolate chips, adding a little milk to make a fairly stiff dropping consistency. Spoon into the tin and bake in a moderate oven for 1 hour 20 minutes.
- A metal skewer inserted into the cake should come out clean. Leave to cool in the tin for 5 minutes, then turn out to cool completely on a wire rack.
- Beat the butter or margarine, sugar, milk and food colouring together. Spread over the top and sides of the cake and fork up. Decorate as shown. Finally add the candles.
- To make a very quick, one-stage cake, use soft margarine and add 1 teaspoon baking powder to the ingredients. Beat all together until very soft and light. Stir in the chocolate chips last.
- If the chocolate chips are not available, chop a bar of dark plain chocolate.
