Blackberry Cornbread
Ingredients
- 5 1/2 oz plain flour
- 4 oz cornmeal
- 1/2 tsp salt
- 2 1/2 tsp baking powder
- 1/2 cup Granulated Sugar
- 2 eggs lightly beaten
- 6 floz milk
- 2 oz butter melted
- 10 oz blackberries fresh or frozen
Instructions
- Preheat oven to 200°C (400°F) Gas Mark 6.
- Lightly grease a 20 X 20-cm/8 x 8-in baking tin.
- Sift dry ingredients together.
- In a separate bowl, combine eggs, milk and melted butter.
- Pour liquid ingredient into flour mixture and stir well.
- Add blackberries and mix.
- Pour batter into baking tin. at 200°C (400°F) Gas Mark 6 until top is lightly browned, about 30 minutes.
- Cut into squares and serve warm.
