Winter Whip
This light and airy mousse is an ideal way to liven up winter fruits. Calories per serving 120, Takes 25 minutes + 2 1/2 - 3 1/2 hours chilling
Ingredients
- 8 oz blackberries
- 8 oz plums stoned and quartered
- 6 oz pears peeled, cored and diced
- 1/2 oz granulated artificial sweetener
- 7 oz low fat soft cheese
- 1 egg white
Instructions
- Place the blackberries, plums and pears in a large saucepan with the sweetener Cover and heat gently for 5 minutes until the fruit is soft.
- Push the cooked fruit through a sieve, discard the seeds and chill the puree in the fridge for 30 minutes.
- Place the soft cheese in a mixing bowl and beat it with a wooden spoon to soften it. Gradually add the fruit puree and whisk well.
- Whisk the egg white until it forms soft peaks and fold this into the fruit mixture. Divide the mixture between four individual glass dishes and chill for 2-3 hours.
- tip: For a firmer mousse, you can dissolve a teaspoon of gelatine in a little water and whisk this into the fruit before adding the soft cheese. The Points per serving will remain the same.
