Spiced Spinach (Palak Bhaji)
Ingredients
- 3 1/3 lb spinach
- 1/2 tsp cumin
- 1/2 tsp ground coriander
- 1/4 tsp salt
- 2 oz ghee
- 2 chopped cloves of garlic
- 2 tsp grated ginger
Instructions
- Mix together the cumin, ground coriander and salt.
- Golden fry the garlic and grated ginger in the ghee, then stir in the mixed spices.
- Add the picked spinach, moisten with a little water, cover with a lid and simmer for 5 minutes.
