Tsoureki is a traditional Greek Easter bread, baked in a special pan and decorated with a cross of hard-boiled egg.

Ingredients
 

  • 1 lb strong flour
  • 1 tsp salt
  • 2 eggs
  • 5 1/3 floz warm milk
  • 1 tsp sugar
  • 2 tsp water
  • 3 1/2 oz melted butter
  • 1 tbsp yeast
  • 1/2 tsp mastic
  • eggwash
  • sesame seeds

Instructions

  • Sift 450 g strong flour and 1 tsp salt into a basin. Mix 2 eggs with 150 ml warm milk, add 1 tsp sugar, 2 tsp water, 100 g melted butter and 15 g yeast also 1/2 tsp mastic, which is powdered resin. Add to the flour and mix to a dough.
  • Allow to prove, divide into two, then mould each piece into 3 strands.
  • Twist into plaited loaves, place on a greased tray, brush with eggwash and sprinkle with sesame seeds.
  • Allow to prove, then bake at 180°C for 30 minutes.
