  • 1 crisp Lettuce shredded
  • 2 Oranges peeled, pith removed and separated into segments
  • 1 Large tomato thinly sliced
  • 1 Tbs Lemon juice
  • 1 Tbs Vegetable oil
  • 1 tsp Chopped chives
  • Salt and pepper to taste


  • Arrange the lettuce on a serving plate.
  • Put the orange segments and tomato slices in a bowl. Combine all the remaining ingredients in a screw-top jar and shake well to blend. Pour over the fruit and toss well to blend.
  • Arrange the fruit and dressing mixture over the lettuce and chill in the refrigerator for 15 minutes before serving.
