Ingredients
 

  • 20 scallops
  • 21 oz prawns
  • 7 oz mango flesh
  • 1 3/4 floz olive oil
  • 1 3/4 floz lime juice

Instructions

  • Marinate 20 scallops and 600 g prawns in a liquidised blend of 200 g mango flesh, 50 ml olive oil and 50 ml lime juice.
  • Skewer cooked snow peas with the prawns and scallops and grill.
  • Boil the strained marinade, thicken with diluted arrowroot to a sauce consistency, season and serve in sauceboats.
