Grilled Skewered Prawns and Scallops with Mango Sauce (USA) recipe
Ingredients
- 20 scallops
- 21 oz prawns
- 7 oz mango flesh
- 1 3/4 floz olive oil
- 1 3/4 floz lime juice
Instructions
- Marinate 20 scallops and 600 g prawns in a liquidised blend of 200 g mango flesh, 50 ml olive oil and 50 ml lime juice.
- Skewer cooked snow peas with the prawns and scallops and grill.
- Boil the strained marinade, thicken with diluted arrowroot to a sauce consistency, season and serve in sauceboats.
