Green Beans in Tomato Sauce
Ingredients
- 1 oz Butter
- 2 Garlic cloves crushed
- 2 lb Green or French beans cut into 2 1/2 cm (1 in) lengths
- 1 1/2 lb Canned peeled tomatoes chopped
- 1 Tbs Finely chopped chives
- Salt and pepper to taste
- 1 Bay leaf
- 1 Tbs Chopped pine nuts
- 1 Tbs Lemon juice
Instructions
- Melt the butter in a large saucepan. Add the garlic and fry for 2 minutes, stirring constantly. Add the beans and cook for 4 minutes, stirring occasionally.
- Stir in the tomatoes and can juice, and all the remaining ingredients and bring to the boil, stirring constantly. Reduce the heat to low and simmer for 25 to 30 minutes or until the beans are very tender and the liquid has reduced a little.
- Remove and discard the bay leaf. Transfer the mixture to a warmed serving dish and serve at once.
