Fried Salt Codfish Balls (USA)
Ingredients
- 21 oz flaked poached salt cod
- 21 oz mashed potatoes
- 3 egg yolks
- 2 oz butter
- 1 1/2 floz cream
Instructions
- Combine 21 oz flaked, poached salt cod, 21 oz mashed potatoes, 3 egg yolks, 2 oz butter and 1 1/2 floz cream.
- Mould into small balls, flatten to form round cakes, and mark criss-cross fashion.
- Place into frying baskets and deep fry at 190°C until golden brown.
- Serve garnished with lemon wedges and picked parsley.
