  • 1 cup plain flour All purpose
  • 1 pinch of salt
  • 1/3 cup butter
  • 1 tsp caster sugar superfine granulated
  • 1 egg beaten


  • Mix the flour and salt together and rub in the fat with the fingertips until the mixture resembles fine crumbs.
  • Mix in the sugar. Add the egg, stirring until the ingredients begin to stick together, then with one hand collect the mixture together and knead very lightly to give a firm, smooth dough.
  • Roll out and use as required. Makes enough pastry to line a 15 cm (6 inch) flan ring.
