  • 4 pork loin chops 2.5 cm (1 inch) thick

for the stuffing

  • 1 onion chopped
  • 1 tbsp butter
  • 3 oz cooked brown rice
  • 2 oz dried apricots finely chopped
  • 1 good pinch salt
  • freshly ground black pepper to taste
  • basting mixture
  • 1 tbsp cooking oil
  • 4 tsp lemon juice
  • 2 tsp dried or 2 tbsp chopped fresh sage


  • Saute onion in heated butter in a heavy-based saucepan until translucent. Add remaining ingredients and leave to cool.
  • Prepare the basting mixture by mixing all the ingredients together.

  • Trim off excess fat according to preference. Cut a pocket in each chop, fill with a little stuffing and secure with a cocktail stick.
  • Cook chops 10 cm (4 inches) under a pre-heated grill for 5 to 7 minutes in total (medium) or 7 to 10 minutes in total (well-done), basting frequently with basting mixture.
  • Season with salt and pepper and serve.
