Stuffed Pork Loin Chops
Ingredients
- 4 pork loin chops 2.5 cm (1 inch) thick
for the stuffing
- 1 onion chopped
- 1 tbsp butter
- 3 oz cooked brown rice
- 2 oz dried apricots finely chopped
- 1 good pinch salt
- freshly ground black pepper to taste
- basting mixture
- 1 tbsp cooking oil
- 4 tsp lemon juice
- 2 tsp dried or 2 tbsp chopped fresh sage
Instructions
- Saute onion in heated butter in a heavy-based saucepan until translucent. Add remaining ingredients and leave to cool.
- Prepare the basting mixture by mixing all the ingredients together.

- Trim off excess fat according to preference. Cut a pocket in each chop, fill with a little stuffing and secure with a cocktail stick.
- Cook chops 10 cm (4 inches) under a pre-heated grill for 5 to 7 minutes in total (medium) or 7 to 10 minutes in total (well-done), basting frequently with basting mixture.
- Season with salt and pepper and serve.
