Chow chow (also called chayote, vegetable pear or christophine) could be replaced with courgettes or cucumber.

  • 1 chow chow peeled, stoned, and sliced lengthways
  • juice of 1/2 lemon
  • 14 oz canned tomatoes drained and sieved
  • 2 tbsps Greek yogurt
  • 1 tsp paprika
  • 1 small fresh green chilli deseeded and very finely sliced


  • Sprinkle the chow chow with lemon juice and steam for about 10 minutes or until tender.
  • Cook the tomatoes in a large frying pan until thick and pulpy.
  • Stir in the yogurt and paprika.
  • Transfer the steamed chow chow to a heated serving dish, pour over the creamy tomato sauce and garnish with chilli.
