Although Matzo Brei can also be served sweet with sugar and cinnamon, I prefer it as a savory luncheon dish, with plain boiled potatoes.

  • 2 whole matzos
  • 1/2 cup milk
  • 2 eggs well beaten
  • salt and black pepper
  • 2 tablespoons butter


  • Place the matzos in a large, shallow dish and cover with the milk. Drain well and transfer to a bowl. Stir in the eggs, salt, and pepper.
  • Heat the butter in a skillet over moderate heat. Add the egg mixture and cover the pan. Cook for about 10 minutes, or until the underside is well browned. Turn carefully and brown the other side.
  • Serve at once.
