A Passover pudding popular in Romania and Bulgaria, this is served as either a dessert or an accompaniment to meat.

Ingredients
 

  • 6 matzos
  • 1 cup raisins
  • 6 eggs
  • 1 cup coarsely chopped walnuts
  • 2 green apples peeled, cored, and diced
  • 1/4 cup oil
  • 1/2 cup honey
  • 1/4 cup sugar
  • 2 tablespoons margarine cut in pieces
  • 1 teaspoon ground cinnamon

Instructions

  • Break the matzos into pieces. Pour a little boiling water over to soften them, then squeeze out the excess moisture. Mix matzos with the raisins and eggs in a bowl.
  • Mix the walnuts and apples in another bowl with the oil, honey, and sugar. Add this mixture to the matzo mixture and stir well.
  • Preheat the oven to 350°F.
  • Grease a deep 1 1/2 quart ovenproof dish and pour the mixture in. Sprinkle with cinnamon, then bake pudding for 1 hour.
  • Serve warm, or chill and serve with applesauce.
