Babanatza
A Passover pudding popular in Romania and Bulgaria, this is served as either a dessert or an accompaniment to meat.
Ingredients
- 6 matzos
- 1 cup raisins
- 6 eggs
- 1 cup coarsely chopped walnuts
- 2 green apples peeled, cored, and diced
- 1/4 cup oil
- 1/2 cup honey
- 1/4 cup sugar
- 2 tablespoons margarine cut in pieces
- 1 teaspoon ground cinnamon
Instructions
- Break the matzos into pieces. Pour a little boiling water over to soften them, then squeeze out the excess moisture. Mix matzos with the raisins and eggs in a bowl.
- Mix the walnuts and apples in another bowl with the oil, honey, and sugar. Add this mixture to the matzo mixture and stir well.
- Preheat the oven to 350°F.
- Grease a deep 1 1/2 quart ovenproof dish and pour the mixture in. Sprinkle with cinnamon, then bake pudding for 1 hour.
- Serve warm, or chill and serve with applesauce.
