Leaf Spinach with Spices (Palak Bhaji)
Ingredients
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- 1/2 tsp turmeric
- 1/4 tsp chilli powder
- salt
- 3 1/2 oz chopped onion
- 4 tbsp oil
- 2 crushed cloves of garlic
- 1 tsp grated root ginger
- 4 1/2 lb boiled spinach
- 4 tbsp water
Instructions
- Mix 1/2 tsp each of cumin powder, coriander powder and turmeric, 1/4 tsp chilli powder and salt.
- Golden fry 3 1/2 oz chopped onion in 4 tbsp oil or ghee, add 2 crushed cloves of garlic and 1 tsp grated root ginger, then stir in the mixed spices and cook for a few moments.
- Add 2 kg boiled spinach and 4 tbsp water, cover with lid and simmer for 5 minutes. Drain off the surplus liquid and serve.
