  • 1 oz butter
  • 1 lb chicken livers halved and trimmed
  • 1/2 tsp mild curry powder
  • 1 tbsp Dijon mustard
  • 2 tsp Worcestershire sauce
  • 5 floz chicken stock

to garnish:

  • 2 oz long grain rice cooked and kept hot; 4 spring onions, finely chopped.


  • Melt the butter in a pan, add the chicken livers and fry, stirring gently, for 2 minutes.
  • Stir in the curry powder, mustard, Worcestershire sauce and seasoning. Add the stock and cook over gentle heat, stirring, for 5 minutes.
  • Mix the rice with the onion. Serve livers on individual plates, garnished with the rice.
