It may seem surprising that Curd Cheese can make a light pastry, but it does. Remember, Pastry is only as good as the flour you use. Don't buy cheap flour.

  • 8 oz curd cheese
  • 4 oz butter
  • 4 oz margarine
  • 8 oz flour
  • 1 tsp baking powder


  • Mix the cheese and fats together and rub them into the flour and baking powder.
  • Refrigerate for a minimum of 3 hours.
  • This pastry can be used to make sweet tarts, Danish pastries, strudels.
  • For a strudel, roll out and spread with chopped apples, jam, raisins, crushed cornflakes and sugar. Roll up and bake.
  • For individual pastries, cut pastry into squares measuring about 5 cm (2 in).
  • Fill with apricot jam, finely chopped apples with raisins, or cheese filling.
  • Either fold over to make a triangle or bring the corners together in the middle.
  • Brush with beaten egg and bake at 180°C (350°F) Gas 4 for 30 minutes.
