Curd Cheese Pastry
It may seem surprising that Curd Cheese can make a light pastry, but it does.
Remember, Pastry is only as good as the flour you use. Don't buy cheap flour.
Ingredients
- 8 oz curd cheese
- 4 oz butter
- 4 oz margarine
- 8 oz flour
- 1 tsp baking powder
Instructions
- Mix the cheese and fats together and rub them into the flour and baking powder.
- Refrigerate for a minimum of 3 hours.
- This pastry can be used to make sweet tarts, Danish pastries, strudels.
- For a strudel, roll out and spread with chopped apples, jam, raisins, crushed cornflakes and sugar. Roll up and bake.
- For individual pastries, cut pastry into squares measuring about 5 cm (2 in).
- Fill with apricot jam, finely chopped apples with raisins, or cheese filling.
- Either fold over to make a triangle or bring the corners together in the middle.
- Brush with beaten egg and bake at 180°C (350°F) Gas 4 for 30 minutes.
