Cullen Skink
Cullen Skink is a traditional Scottish recipe using smoked haddock and potatoes.
Ingredients
- 8 oz potatoes peeled and diced
- 1 large onion peeled and diced
- 15 floz milk
- 1 lb smoked haddock fillet skinned
- Salt and pepper to taste
- 1 oz butter
Instructions
- Put the potato, onion and milk into a saucepan and cook gently for about 20 minutes, until the potato is cooked.
- Cut the fish into chunks and add to the potato mixture.
- Cover and simmer for a further 20 minutes.
- Season to taste and add the butter just before serving.
