Creamed Beets
This Polish dairy dish is a very suitable main course for Shavuot, the Feast of Weeks.
Ingredients
- 2 pounds cooked beets
- 4 tablespoons butter
- 1/2 teaspoon salt
- 2 tablespoons wine vinegar
- 1/2 cup heavy cream
Instructions
- Peel and chop the beets.
- Heat half the butter in a skillet over high heat and saute the beets for 5 minutes, stirring frequently.
- Sprinkle with salt and vinegar.
- In a small saucepan, melt the rest of the butter and pour it over the beets.
- Stir, then add the cream and stir again. Serve hot.
