Boston Roast
Ingredients
- 10 1/2 oz haricot beans
- 1 onion
- 1 tbsp oil
- 5 1/3 oz Cheddar cheese
- 2 tbsp meat or vegetable stock or water
- 1 egg
- 4 oz soft white breadcrumbs
- salt and pepper
- fat for greasing
Instructions
- Prepare and cook the beans. Drain and mash them finely.
- Skin and chop the onion.
- Heat the oil in a frying pan and fry the onion until golden brown.
- Grate the cheese.
- Put all the ingredients into a bowl and mix well.
- Shape the mixture into a loaf, place in a greased baking tin, and cover with buttered greaseproof paper.
- Bake in a moderate oven at 180°C gas mark 4 for 45 minutes.
- Serve with gravy and vegetables.
