  • 1 cup plain flour All purpose, sifted
  • 3 tablespoons olive oil
  • 8 floz beer or water
  • 2 egg whites


  • Put the flour into a mixing bowl and make a well in the centre.
  • Pour in the oil and, using a balloon whisk or wooden spoon, beat it thoroughly into the flour.
  • Add the beer gradually, beating from the outside of the bowl towards the centre.
  • Set aside until you are ready to cook, then whisk the egg whites fairly stiffly and fold them into the batter.
  • Use straight away.
